Minestrone Soup

It’s winter in South Africa and what better way to keep warm than a hot bowl of soup to keep the cold away, with an extra kick of spiciness you should be safe this winter.

I for one enjoy a spicy, MINESTRONE SOUP.

Here is how to make it.

Carrots
Cabbage
Beans
Tomato paste
Basil
Olive oil
Salt and pepper


1. Dice your carrots and grate your Cabbage.
2. Splash a dash of olive oil in a pan in put in low heat.
3. Throw in your garlic and carrots and cook in low heat for a few minutes (5-8 minutes)
4. Add your Cabbage and season with your salt and pepper. Give it a good stir.
5. Add your tomato paste and loose with hot water.
6. Add your beans and live to boil for about 10 minutes.

Use the Basil to garnish.

This recipe doesn’t have measurements but as your cook you will know want and how to add it trust in me. I will create a video later and will give you some measurements.
