Ingredients
– Stewing pork
– Lamb wors
– Shallots / Onion
– Carrots
– Potatoes
– Parsley
– Garlic
– Cumin
– Turmeric
– Green chilli
– Vegetable stock (liquid)
– Beer
– Vegetable oil. .
Method
LAMB MEATBALLS
– remove the meat from casing & shape into meatballs .
STEW
– Pour 2 TBS of oil in a heavy based pot & heat on medium heat
– Add spices to activate & fry for about 3 seconds
– Add shallots & sweat till soft
– Add pork & coat in spices thoroughly
– Lower your heat, add stock & cover
– Cook for 45 min, or until the pork meat is soft
– Add vegetables and stir
– Cover for an additional 10 min or until the stock is fully absorbed – Add meatballs and leave to steam on top of the stew for 4 minutes
– Stir gently & coat all meatballs with sauce
– Cover with beer & simmer until sauce reduces into a thick sauce.
– Add parsley leaving some for garnish .
Serve with either bread, rice or pap.
