Serve 4-6
Ingredients:
8 pieces chicken
1 cup chopped brown mushrooms
Few springs of thyme
250ml fresh cream
1tbsp olive oil
1tsp white wine vinegar
1 cup baby spinach
250ml chicken stock mixed with boiling water
Method:
In a pan heat oil and brown meat both sides and set aside
In the same pan add another oil
Put mushrooms and fry
Pour cream and stock and keep stirring
Add spinach and thyme
Add vinegar allow to simmer for 5 minutes on medium heat
Now in a baking dish put meat
Pour over cream mixture
Bake in a preheated oven 180 and bake until cream thickens and chicken is well cooked inside
