Lamb Curry & Basmati Rice

Ingredients 


Two cups basmati 
Three cups water
Salt 
1/2 Teaspoon Turmeric 
1 Tbsp Spice for Rice
Cupful Peppers 
1 Medium Onion Chopped
5 Tbsp Olive oil
1 Tbsp Garlic 


Directions 


1. Boil 2 cups water then add basmati rice, salt then reduce heat to medium. 
2. Cook till soft +- 20min then sprinkle some turmeric, stir then cover.
3. On a separate pan, fry veggies, add rice to veggie mixture.
4. Carefully mix and sprinkle some spice for rice. Stir then serve.

Lamb Curry Recipe 


Ingredients 


1 kg Lamb cubes
1 large onion
6 Garlic Cloves Minced
2 Tbsp Raisins (I chop them to tiny pieces)
1 Tbsp Cumin
1 Tbsp Paprika
1 Tbsp Rajah
1 Tbsp Coriander 
2 Lamb Cubes
1 Tbsp Rosemary 
1 Tbsp Cardamom (Found at any spice shop)
1 Tspn Ground Gloves 
4 Medium Potatoes Cubed
1 Canned Tomatoes 
3 Tbsp Tomato Paste

Method

1. Over medium to low heat, cook lamb. Cooking over medium to low heat will allow it to cook through in it’s own water. Add 3 Tbsp olive oil and cook till it starts frying…
2. Add onions, garlic and all the spices. Keep stirring till onions are cooked.
3. Add tomatoes, potatoes & tomato paste with 200ml water.
4. Once Potatoes are cooked, add chopped handful fresh coriander.
